Ohoka Gold is a labour of love as the grove is tended carefully so the fruit can be harvested before the North Canterbury frosts hit.Once the olives are picked from the trees, they are cold pressed within 24 hours of harvest to maximise freshness and quality. The harvested olives, de leafed and washed, travel only 2 minutes to the olive press. The oil is picked up then bottled on site and stored in a dark, temperature safe room.
Extra virgin olive oil, being a fruit juice, does not age like wine.
The maximum shelf-life being only 2 years after harvest.
Heat, oxygen, light and age are the enemies of EVOO.
We store our EVOO in a dark container in a cool place for a maximum of 2 years post-harvest.
